To surprise your father on this special day, our suggestion is to impress him with a Nut Cake with mascarpone and mango icing, with lots of love and affection.
To make it, you’ll need
Ingredients:
✔ 300g sugar;
200g butter (softened);
✔ 200g walnut kernels (ground);
✔ 150g flour;
✔ 6 eggs;
✔ 1 teaspoon baking powder;
Topping:
✔ 250g mascarpone;
✔ 1 tablespoon honey;
✔ 300g AgroAguiar deep-frozen mango.
Method of preparation:
1 – Preheat the oven to 180º. Grease a baking tin with butter. Set aside;
2 – In a bowl, beat the butter with the sugar. Add the eggs, one by one, beating constantly, then add the flour and baking powder and beat again. Add the ground walnuts and mix well;
3 – Pour the batter into the tin and bake for 45 minutes;
3 – Once baked, leave to cool before removing from the tin. Unmould and leave to cool completely.
Topping:
1 – In a blender or food processor, blend the mango until smooth. Remove about two tablespoons and set aside. To the rest, add the mascarpone and honey and mix everything together;
2 – Spread the cake with the mascarpone cream and mango and finish with strands of mango pulp sauce.
