Chestnuts are a gastronomic and nutritional treasure. Also known as autumn treats, this food has many advantages. The nutrients they contain enable the development of intestinal flora. They contain fibre that stimulates the presence of probiotic bacteria that are beneficial to the intestine, and help reduce inflammation and some enzymes that may be the cause of some intestinal cancers.

HOW TO PREPARE:
- Start by preparing the aromatic broth by bringing 600ml of water to the boil with the onion peelings, garlic, the green part of the leek and stalks of cabbage and celery. Bring to the boil, strain and set aside.
- Cook the chestnuts in a pan of water or aromatic stock, peel them and set aside.
- Add the leek, onion, garlic and celery to a pan and cook with the aromatic stock.
- Once cooked, add the previously cooked chestnuts, blend everything with a hand blender, garnish with the heart of cabbage, season with cloves, pepper and rosemary and drizzle with olive oil.
